Recipe: Spicy Chow Mein in Brown Sauce

Do you like your Chinese food spicy? I sure do! This is my favorite way to cook Chow Mein.The brown sauce is fairly standard – you have that delicious salty-sweet tang that you want in a house brown sauce, but spiced up with habanero and jalapeno peppers.


Since my wife and I try to keep our meat intake low, we usually cook this meal with a “veggie chicken” made of soy protein. It also works with chicken, beef, tofu or seitan (same amounts) – or it can be great on its own. We also try to avoid too many corn products, so we use rice flour instead of corn starch, but the sauce is great either way. Other vegetables can be great as well – snow peas, mushrooms, onions and bell peppers are some other suggestions, and bean sprouts can be a great garnish. We switch it up all the time. When it comes to stir frying vegetables, you should never feel restricted! This recipe serves 2-3 people.

Brown Sauce:


¼ cup soy sauce
3 tablespoons brown sugar
1 ½ cups chicken broth
1 tablespoon cornstarch OR 2 tablespoons rice flour
1 minced habanero pepper
2 teaspoons vegetable oil
3 minced garlic cloves

Cooking Instructions

In a mixing bowl, mix the soy sauce, brown sugar, chicken broth, rice flour, and habanero pepper. Combine it very well and set it aside.

Add the vegetable oil to a saucepan and cook over medium heat. Add the garlic and stir fry for 10-15 seconds. Then add the mixture you made earlier and bring to a boil. Keep cooking until the sauce is thickened and bubbly.


Chow Mein:


1 package steamed chow mein noodles
1 teaspoon vegetable oil
8-12 oz. veggie chicken (or chicken, beef, etc.)
1 diced jalapeno pepper
8 oz. long beans or broccoli
1 medium carrot, shredded

Cooking instructions

Cook the chow mein noodles as instructed. Generally, you’ll add them to boiling water for 10-15 seconds. Set them aside.

Add vegetable oil to a wok over medium-high heat. Add the diced jalapenos and cook for 1 minute, and then add the veggie chicken. Cook for 5-7 minutes, until the veggie chicken is blackened. Add the long beans/broccoli and shredded carrot and cook for two minutes. Turn off heat.

Add the chow mein noodles, spreading them apart around the wok. Pour the brown sauce over it and toss to distribute well.
