Rustic Fish Soup

Serves: 2

Serving size: 1 bowl

Est time: 40/50 minutes

Rustic Fish Soup is a winter warmer that won't fatten you up but will certainly warm you up and boost your bodies defences. You don't have to be Gordon Ramsay to cook this, it's easy to make and you don't have to break the bank to make this.

Ingredients

  • 1 red onion (or 3/4 shallots)
  • 2 or 3 sticks of celery
  • half of a fennel
  • 3 or 4 cloves of garlic
  • 1 small chilli (without seeds for less spice)
  • 1 can or cup of chopped red tomatoes
  • 1 sweet potato
  • olive oil
  • 2 or 3 spring onions ( green onions)
  • salt and pepper
  • half a cup (150ml) of fish stock
  • 200-300g salmon fish
  • half a lemon
  • 10 peeled and cook prawns (shrimps)
  • quarter cup rice

Instructions

  1. Add olive oil to pot/pan and heat on medium.
  2. Finely chop your celery, red onion, garlic cloves, fennel and chilli and add to pan/pot to sweat for about 10 minutes. Add salt and pepper to your liking.
  3. Meanwhile chop up your sweet potato into cubes.
  4. Add chopped tomatoes, sweet potatoes and stock to pan and bring to boil. You can then let it simmer for 30 minutes.
  5. Time to make your rice if you are having rice with your meal.
  6. Chop up your salmon. You can remove skin if desired. Add to pan and simmer until cooked or 10 minutes.
  7. Now you can prepare your garnish of spring onions (green onions). Chop up.
  8. Ready to serve. I suggest adding your rice first to bowl, then serving the fish soup. Then top with garnish, a squeeze of lemon and a drizzle of olive oil.

Tip

You can use Quinoa instead of rice if you want a healthier protein option.
