Power

The more power the more heat difference, it is possible to hook it up to a few AA batteries and get results.

When powering the device. one side gets cold and the other side heats up. However a little bit later the cool side also gets hot. To prevent this it is necessary to attach a heatsink to the heating side. The bigger the heatsink the better cooling we get. Things to do with a peltier

Swap out the the heating pad of a coffee warmer with the peltier and keep your drink ice cold on a summer day, for CPU cooling, or cooling a laser, also can make a handheld A/C unit, and another project is to convert heat into electricity (though the efficiency is poor).

Feedback control

In physics labs quite often one needs to control the temperature of objects very precisely, there are circuits and ICs made for stabilizing temperature with thermocouples as detectors and such thermoelectric-coolers as control devices. Should investigate how to implement those.
