Easy soup recipes - Red bean beef chili soup

(Chicken Nic's famous 5-alarm chili)

Preparation time: 30 minutes

Cooking time: 1 hour

Ingredients

Red sauce and pasta

6 tbsp Extra virgin olive oil (EVOO)

1 medium Yellow onion (sliced)

4 cloves of Garlic (peeled and chopped finely or pressed)

3 16 oz cans of Kidney beans

2 16 oz cans of Diced tomatoes (fire roasted)

3 16 oz cans of Toamto sauce

1 lb Ground beef

1 tsp Cinnamon

1 tsp Cayenne

Garlic bread

1 loaf Fresh Sourdough bread

1 stick of butter

Garlic salt

Condiments

Grated sharp white cheddar cheese

Preparation

Red sauce and pasta

Peel and chop the garlic cloves finely or put aside for pressing when making the soup. Chop the onion up.

Garlic bread

Slice the Pugiliese loaf into eight thick pieces. Spread one pat of butter on each and sprinkle with garlic salt. Put aside until last 10 minutes of sauce simmering.

Condiments

Grate cheese if needed and put aside for serving time.

Sautee the vegetables and brown the beef

Heat up the extra virgin olive oil in a large tall pot. Add chopped garlic or press it into the hot oil. Add the onions and sautee. Add the ground beef and cook until browned. Add cinnamon and cayenne and stir it in until mixed.

Cooking the chili

Add the cans of kidney beans, diced tomatoes, and tomato sauce. Bring to a boil. Reduce heat to low, cover and simmer the soup 1 hour. Stir frequently, about every 10 minutes or so, and check to make sure that the sauce does not burn on the bottom of the pot.

At the last 10 minutes of simmering the soup, proceed on to “Toasting the garlic bread.”

Toasting the Garlic bread

When the sauce is in its last 10 minutes of simmering, heat oven to 350 F. Put tray of garlic bread in oven for 10 minutes. Serve hot.

Serving

Serving bowls are recommended over plates. Place about a quarter of the soup into each bowl.

Top with grated cheese if desired.

Serve with a couple of pieces of garlic bread on top or on the side.

Leftover soup can be frozen for later.

Wine or beer pairing

Pair with a cabernet, bordeaux blend or IPA.
