Creamy Pasta with Chicken and Mushrooms

Serves 4

Ingredients

500g Packet of pasta, preferably penne or large spirals

500g Chicken thigh fillet

250ml Thickened cream

200g Mushrooms, any type you prefer

100ml Full cream milk

1/2 Medium sized onion

50g Sun dried tomatoes

25g Corn starch

1 tsp Chili flakes (or according to taste)

20ml Sunflower oil

Salt and pepper to taste

Preparation

__Chicken__

Dice chicken into 2cm cubes. Thigh meat is preferred due to its extra flavour and is less likely to dry out, however you can use breast meat if you prefer.

__Mushrooms__

Dice mushrooms into similar sized cubes as the chicken. This will ensure the flavour infuses into the sauce more effectively.

__Onion__

Dice the onion finely.

__Sun dried tomatoes__

Dice the tomatoes into similar shaped pieces as the chicken and mushroom.

Cooking the Pasta

Fill suitable pot with water and add a pinch of salt. Put on high heat and allow to boil. Once boiled, add all pasta and stir well. Follow directions on packet however most will be ready in 8-10 minutes. During this time you can start cooking the sauce. Once the pasta is cooked to your liking, drain well and return to empty pot and leave aside.

Making the Sauce

Add the sunflower oil into a medium sized saucepan and allow to heat on high heat. Once the oil is hot, add the diced onions and chili flakes. Allow 2-3 minutes for the onion to brown and then add the diced chicken, sun dried tomatoes and salt and pepper. Allow 3-4 minutes for the chicken to slightly change colour and then add the mushroom. Turn the heat down to medium and let the sauce simmer for 5 minutes. After the 5 minutes add the thickened cream and the milk. Stir well and now add the corn starch. The starch will be most effective if diluted with a little water first. Turn the heat down to low and allow sauce to thicken. The sauce should now have a creamy consistency, if not you can add more milk to thin or add a little more corn starch to thicken. After 5 minutes take sauce off heat and combine with the pasta and serve.
