Chicken breast with zucchini and capsicum recipe

In this article I will present a simple but fast way to cook something nice using very few ingredients. The time for preparing it and cooking it is a matter of minutes, and the effort for preparation is minimal. This is the kind of food that even boys can cook. And it's not fast food!

So, here I will show you how to cook chicken breast in the pan (or a grill for cooker) with peppers and zucchini. It doesn't sound very complex, and indeed, it is not. But the taste is good and the time to cook is minimal, and that's what matters when you want to get a fast meal. Also, the aspect will be pleasing if done correctly.

First, we will need the following ingredients (the numbers can be modified, this is just for what I consider a portion):

Warning: If you have any kind of allergy to the below ingredients or if you have any medical condition that restricts you from eating these ingredients, do not try this! This is just a suggestion of something I tried, and I have not made any research on the impact on health on short or long term. I am not a nutritionist, and this recipe is not taken from any authorized cookbook. So, if you decide to try it, try it at your own risk. I tried it, and it was OK for me.

So, the ingredients are the following:

  • 4 slices of chicken breast;
  • 4 thin slices (stripes) of pepper (usually capsicum. The color is up to you);
  • 4 slices of zucchini;
  • salt and condiments (optional).

You take a chicken breast and you cut 4 slices, not too big and not too small. You put some condiments on the recently cut slices. I usually prefer oregano because it gives it a nice flavor and taste and it is not spicy. Then, you cut 4 thin slices of capsicum, one for each slice of breast. The slices should be more like stripes, not very wide because we use it just to give it a slight taste of capsicum. After that, you should cut 4 slices of zucchini as well, again one for each slice of meat cut.

Warm up a pan (or cooker grill). You can put a little vegetable oil so that the meat won't stick (just to make the pan slippery). But it can go without oil also. Put the pieces of chicken breast in the pan. Put on top of each of the 4 slices of meat one stripe of capsicum and one slice of zucchini and set the fire low so that the meat won't get burned. You will let it cook for a few minutes, and check from time to time so that the bottom of the meat doesn't get burned. It should look like this:

After a few minutes, when the bottom of the meat has got white (you can check the sides of the meat, you don't have to look right under the slice), it is time to turn the meat. To do this, you need 2 forks. Use a wide fork to pick up the slices of pepper and zucchini from the top of the first slice of meat. Then, with another fork, turn the slice of meat and then put back the slices of pepper and zucchini on top of the slice of breast. Repeat the procedure for the remaining 3 slices of meat, and again let it to cook until the side of the slice that is in contact with the pan gets white and starts to look cooked. Don't worry if you will drop the slices of zucchini and pepper in the pan while turning the slices or checking under the meat slices. They will just get a little burned in the worst case, but most probably, they will get fried a little bit which will add to the good overall taste. Actually, that is the entire idea. To have the meat fried using the juices that come out of the pepper and zucchini, and also slowly fry the vegetables without burning them. All done at the same time.

After repeating the process of turning the slices of meat a few times until they look ready (they should be white and a little brownish from place to place), they are ready to be picked up from the pan, and put onto a plate. Now you should be careful not to drop the slices of zucchini and pepper from the top of the meat slices, because this is how they will be served. The result should look like this:

I have to admit that my version is not the best looking, but the taste was great! At least, I liked a lot the combination between the meat and the peppers and zucchini which were fried just enough.

And, the meal is ready to be served!

As you can see, it is not very complex and it is not the best looking ever (although it can look much better with practice and paying more attention). But I didn't need many ingredients, it was tasty, and it was very fast to do! I managed to fry everything in one shot, in a few minutes! So I think it was a successful meal in the end.
