Chicken and Avocado Soup

A great tasting soup that won't ruin your figure, this Chicken Avocado Soup is ideal for those on the Paleo diet, see link paleo diet_basics and recipes and for everyone else who want a nutritious soup. Not only is it refreshing but filling too yet won't leave you feeling bloated. It is an easy soup to make and I recommend chopping up all your vegetables beforehand.


  • 2 chicken breasts
  • 1 large avocado
  • 1/2 cup cilantro (coriander)
  • 2/3 cloves of garlic
  • 4 green onions
  • 2 tomatoes
  • 1 lime
  • 5/6 cups of chicken broth
  • Salt and pepper to taste
  • A pinch of cumin
  • 4 radishes
  • 4 tsp olive oil


  1. Season chicken with salt and pepper (you can also add a sprinkle of oregano if you like) and heat 2 teaspoons of olive oil in a frying pan at a high temperature meanwhile. Then throw in the chicken into frying pan and reduce heat after a minute to a medium heat. Cook completely but don't brown too much. Once done remove from pan and place on chopping board. With a fork start shredding the chicken until complete.
  2. Heat a pot with 2/3 teaspoons of olive oil at medium/high temperature until hot.
  3. We need to start making our vegetable broth. First wash your green onions and cut into small pieces. Put them into a cup and add 2 or 3 crushed up garlic gloves (depending on your liking). You can use a garlic press for best results. Add to pot and sauté for about 2 minutes.
  4. Chop up your tomatoes into small pieces. Add to pan and let them sauté about another minute.
  5. Add your chicken broth, cumin and salt to pan.
  6. Stir the broth and bring it to the boil, then reduce temperature so broth is simmering for 15/20 minutes. Cover with a lid.
  7. You need to layer your eating bowls next. Fill bowls with chopped cilantro, the shredded chicken, chopped radish and avocado. Arrange as you please for decoration.
  8. Add the broth to your bowls to serve and enjoy. You may add a slice of lime with dish.
